Recipe – Ida May Sother’s Peanut Butter Pie

This is the easy way to make Grandma’s Peanut Butter Pie.
Ingredients: Pie Crust
Get premade pie crust at the store. (Can make from scratch if you want to be like grandma. Any pie crust recipe will do.) Don’t get graham cracker pie crust unless you want to experiment.
Bake pie crust per directions on package.
Ingredients: Pie Filling
2 Boxes Vanilla Pudding – cook & serve not instant (Can use Chocolate Pudding also. We tried it and it is very good too!!!)
3 Tbs Peanut Butter – Creamy or Crunchy, your choice (I prefer creamy)
1 Tsp Vanilla
Cook the pudding with the directions on the box. Once pudding is done cooking then mix in Peanut Butter & Vanilla.
Ingredients: Meringue (Can use Cool Whip or put nothing on top)
1 Tbs Corn Starch
1/2 cup boiling water
3 egg whites
6 Tbs Sugar
few grains salt
Put corn starch in small bowl and add enough water to just moisten, then mix together.
Boil 1/2 cup water and add corn starch. Reduce heat. Cook until thick and clear.
Put in bowl and cool in refrigerator.
Beat 3 egg whites until stiff.
Add salt then sugar. Beat until sugar is completely dissolved.
Beat in cool corn starch until right consistency. (It can stand in peaks)
Spread meringue on top of pie filling.
Cook at 375 degrees for 17 minutes or until meringue is brown.
*If not using meringue then don’t need to put in oven.
